imo, you would be better off just building a new stand out of 2x4 and skinning it, I don't think by taking the old stand apart and putting it back together with new materials would look good, what I mean is the old finish, type of wood, would never match

yes and no, depending how you go about removing the pieces, if you take a sledge hammer to it your screwed, but on the other hand if you take a sharp chisel and a small hammer you will be okay. And also remember that is it is oak as you mentioned any divots or imperfections can be filled in with filler, before you sand and prime
