I'm getting a lot of inquiries into this clam as people never heard of cultured squamosa coming out of Australia. Indeed these Aussie cultured squamosas are a first in the states as far as I know. So please allow me to give a bit more background.
They were aquacultured by the Australian government for a research project on sustainable food source. These clams were cultured in closed systems, located outdoor and never seen sea water. My supplier happened to be at the right place at the right time when he saw them and asked about importing them. Fast forward 3 years later and we are here with a few of them, after getting the proper permit and paperwork in place as you know Australia has very strict procedure on the exportation of their wild life. I'm told now that the project has concluded and when these are gone, they're gone.
