I am having trouble keeping up my calcium levels. I can't seem to get it above 350 and is now 315. I have been adding liquid calcium supplements per the required dosage on the label but can't seem to get it anywhere near the 400+ level. Can I dose the tank above the recomended dosage on the label in order to achieve the required level and then monitor daily and add as needed? Or should I be using Kalkwasser instead?

Personally I use b-ionic to keep my levels stable and if I ever need to bump them up I use Calcium Chloride by ESV and it works well for me

Yes.

You can use both. You can top-off all evaporation with kalkwasser and if additional Ca/Alk is needed you can supplement. I'd recommend a balanced two-part additive (like B-Ionic, as Shawn mentioned above) to augment the kalkwasser.

I would also check your Mg level. Sometimes a low Mg(from certain salt mixes) will make it difficult to keep up your Ca.
