So im fishless cycling a tank for about 3 weeks now. 35 tall . I added Dr Tim's one and only and ammonia. Ammonia is 0. Nitrites are past what i can see on the API chart and nitrates are about 80 ppm. I simulated a water change before I did it 75% would take me to about .5 ppm nitrites and about 20 ppm nitrates. Should I do that 75% water change or just let the tank be. The reason they are so high is because I had out too much ammonia to begin with??‍♂️

Sounds like you've got the ammonia cycle complete. Now, unless you have some mechanism for exporting N, (macro algae or filter feeder) a 100% water change should get you ready to go, assuming you are at 0 ppm afterwards and there's no more leaching. You don't have to fill up the tank all the way, just enough to cover all the leaching materials.
