Questions about cycling a tank

Are there any other types of cycle would occur besides the N-cycle in a newly set up tank? I've always thought Nitrification process is the cycle that everyone has been talking about.

I was told many different type of cycle would happen in a new tank, that's why people should wait at least a month before start adding live stocks.

What's the difference between a cycled tank and a mature tank?

I think that our tanks need to go through many more cycles than the nitrogen cycle but the nitrogen cycle is just when our tanks are most dangerious to livestock. I was told once that it can take about a year for our tanks to really become matured.
