Sure can, however, I recommend wiping them down after use, they will rust. Surgical steel is usually 303 or 304 which contains trace amounts of iron in it which will rust if not cleaned or wiped down after contact with saltwater. If possible try to find instruments made of 316L or 304L which are very resistant to rust or other forms of corrosion.
