I was just wondering why most stores drill their tanks on the bottom with stand pipes as opposed to the back of the tanks?

I personally like the look of the back glass drilled out as opposed to the stand pipe.

What are the pros & cons of either?

With drilling the back you have to put an elbow on it to go to the sump. In addition you have to account fo the bulkhead fitting sticking out. So you may end up with a big gap between the wall and the back of the tank. Many tanks have tempered bottoms and have to have the back drilled any way.

I agree with Wazzel. Also, one benefit to drilling the back (if you can accomodate the spacing from the wall) is that you can drill near the top and you'll have less room inside the tank displaced by the overflow box and standpipe. More room for livestock!:)
