I just bought two 120mm 800RPM fans that I installed in my sump. I don't know much about volts/amps. Each fan is 12vDC .1amp.

I spliced in a power brick thats 12v and 1amp.

They run, but seem slow. I forgot how 800RPM/40CFM should feel like, but this is barely any output.

So question is, I just need to find a brick that is 12v and over .2 amps? You just add the ampage per fan and the volts stay the same? if I put a higher volt/amp brick on them will it burn them out?

And yes, 40CFM on a 120mm fan isn't a lot. It'll likely only feel like a small light breeze a few inches away

I'm pretty sure most Scythe fans have a warning about avoiding humid environments. I forget who makes them but there are companies out there that produce fans that are more tolerant. I'll look around and see if I can find them again.
