You could do it, of course, you'd need to get a temperature controller to turn the fans off and on. I'd suggest, instead, the IceCap fans that automatically adjust based on the air temperature in the canopy (their sensors are designed to adjust based on the air temperature). Another option would be to plug your fans into the same timer as your lights.
I have 3 fans that I am very happy with, and they are already plugged in to go on with my lights. However if the temp is above 80, I want them to remain on. They are extremely efficient in cooling the tank.
You can run them through a time delay relay. I would run each fan seperatly though. I learned the hard way that one control for MH is a disaster waiting to happen. Mine are now on 2 TDR's. They keep the fans running for 1/2 hr after the MH go off. HTH
