What you're doing is fine, but basing any decisions on smell will not be very useful. Hopefully I'm not rehashing anything you already know, if so, I'm sorry. You should have an ammonia spike, followed by a nitrite spike, but once both of these go to 0, your cycle is complete. you likely will then have higher nitrates, but since you won't be putting that water into the tank, it's kind of like doing a 100% water change anyway. Just test your ammonia and nitrite in a couple of weeks and see where you are.
Just a note, I did test every other day with mine, and I'm glad I did. My ammonia test would never actualy register 0, but I did see a spike and then a decline to a constant. I eventually took the water into the fish store for a test and they found no ammonia. Some of the home kits don't really register exactly.
