I currently have a 75 gallon FOWLR with 85 lbs. of live rock and 85 lbs. of live sand and 220w or PC lighting. I am adding 220w more of PC lighting to so I can move toward keeping some corals - I would like more of a reef environment.

I have a Percula, 3-stripe Damsel (can't get him out) 4 Peppermint shrimp and a Sally Lightfoot Crab and some snails and hermits.

My question is, do I need to gradually trun on the aditional 220w of lighting, maybe a couple hours a day or can I just add it at once?

You can add it all at once. Normally, when we recommend people to go slow when adding lighting, it's when they already have corals in the tank. Fish, crabs, shrimps adapt to new lighting very fast. It shouldn't be a problem for them.
