My Wellsophyllia has turned hard as a rock, it still retaining it's color though, does this mean it is dead, or infected or what?

If you can see the white skeleton underneath, it's in trouble. If all you see is the colored "membrane" that is it's living tissue, it is probably just deflated. Give it a day or so, given that all your water conditions are fine and there are no other animals (like fish) picking at it.
