Are you getting Florida aquacultured rock? You could quite possibly get some small coral colonies and lots of indigenous hitchhikers. Also, you could pick up some millepora (fire coral) or porites. Even though they have already been mentioned, gorgonians & ricordea would both work well.

It is too bad you want the peppermints, I really like Hamlets and they would fit in your aquarium quite well with a max size of about 6".

Two Scolymias at least that I know of, cubensis and lacera. Hard to find suckers, too.
