A bare bottom tank (with good circulation) helps with keeping detritus suspended until your overflow can pass it to your skimmer. You can also easily siphon out bits of food, etc. that will decay, compromising water quality. It also avoids the crashes that can happen with sand beds when they are disturbed after a long time. A lot of SPS folks use them because of the higher than average flow with SPS tanks.

If a reef aquarium is properly set up, overfeeding should not be a problem. I was reading an older thread on RC having to do with the "coral food recipe" that Eric Borneman uses and my jaw dropped.
A sandbed is like everything else in the reeftank, it needs to have the proper care. In this case, the right "critters" to keep it clean and healthy. I am not a big fan of the deep sand bed unless you plan on keeping animals that would benefit from it. (Certain starfish, sand dollars, etc.)
