Just picked up a beauty of an eel. I want to try and make sure I'm offering the correct foods. Any suggestions

Same for my copperband. I know they can be difficult but I know someone has had success out there.

I have had both of those and been successful.
The ribbon eel needs to start eating and small live shrimp are the best way.
Glass shrimp are used commonly but they are fresh water and are not a good long term diet.
After the eel is eating them I started hand feeding the shrimp using long tweezers when I fed the tank.
After they are trained to eat from tweezers I started to stun the shrimp eventually killing them (freezer and thawing) before I fed.
After that I would just throw in the dead shrimp along with frozen prepared dead shrimp until the eel got to the point of no longer needing glass shrimp. The whole process took two or three weeks and well worth it.
I sold the eel after my fish started disappearing.

The copperband I started feeding live bloodworms when I fed the tank. Feeding less and less bloodworms and eventually no more. That took two weeks.
