Yeah, I don't see why not. It's calcium hydroxide just like aquarium kalkwasser mix.
One downside to spiking with vinegar (according to Randy Holmes-Farley) is that you run the risk of dissolving impurities into the mixture that may not have dissolved without the vinegar present. Of course this would be true regardless of whether you're using aquarium kalkwasser mix or pickling lime.
It's probably not a significant issue, but I just thought I'd pass it on.
FWIW, IME the whole vinegar thing wasn't of much benefit, at least for me. I couldn't really accomplish much more with it than regular kalkwasser. Unless you've got high pH problems or something I wouldn't bother.
Also, I got better results spiking the RO/DI with vinegar and then adding kalk (as opposed to adding kalk right to the vinegar as some do).
