Yes it's eating frozen Rods and mysis. It's around 1.5-2"

How deep of a sandbed do you recommend?

I'd say at 1" and above for the shrimp. Remember it never stops digging and sand that is too fine might get carried around in the water. They also like small rubble pieces to line the inside of their tunnel and around the entrance.
