Regardless if a fish is eating, and has the strength to fight off it, it can still die from it. And healthy fish do die from it, it happens all the time. As for the fish getting ich, if there isn't ich in the tank the fish isn't going to get it, regardless how stressed out it is.
 
If a fish is eating and eating a good diet its body, it will have the strength to fight off ich.

Most tangs get it when they are first introduced because they are stressed.

I will have to double what Barry is saying. After my tank crashed and I started restocking I thought my fish had ich and they probably did since ich is present in almost every system. I did not freak out however, because I remember my old fish used to get dots here and there and the next day or two they would disappear. IME fish only show signs of ich when they are stressed and not eating properly.

Ok let me clear this up ich can kill a fish but for the fish to succumb to ich it would have to have been weakened in the first place.

A healthy fish most times can fight off ich, one of the ways to make sure it to make sure your fish have a a healthy diet and good conditions.

A fish that dies from ich was not healthy to begin with. Something stressed the animal body that made it weakened and more susceptible to dissease.

if u never introduce it it's not there... Someone come give my fish ich by scaring them or stressing them out... I'll bet anyone money that I can put any one of my tangs in a super small tank and not feed them till they die.. They won't get ich... But my tangs are beautiful.. Let's do it for a grand... Hypo tangs and qt all = no ich

Not killing my fish just saying! Lol
