a long time ago in the cayman islands on a charter boat I had a salad of reef fish. the captain went spear fishing for our lunch. I remember a large parot fish and a bunch of wrasses. that lunch was probably worth 2K in fish store prices. the way the dish was prepared I could not tell which fish I was eating, but it was all good.

We catch them locally and they are really good. Most people don't know how to prepare it because the skins is so tough to remove.
