But Bob your parameters ( the ones you post i.e. Ph dropping to 7.9 Alk at 2.0) are not a sea level values. They are lower then sea level values.

But, Bob didn't start his tank using his recomendations. Polecat will.

Looking at Polcats levels it would appear that he's currently at NSW values give or take. It would be better if Bob would document his own tank from birth to adult using his prescribed methods but we'll have to live vicariously through Polcat.
